  • 4 ounces bittersweet chocolate, chopped
  • ½ cup unsalted butter, plus extra for greasing
  • ½ cup granulated sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1 teaspoon vanilla extract
  • ¼ cup all-purpose flour
  • Pinch of salt
  • Powdered sugar for dusting
  • Fresh berries (e.g., raspberries, strawberries)
  • Vanilla ice cream (optional)

Instructions:

  1. Preheat your oven to 425°F (220°C).
  2. Grease the ramekins with butter and dust with flour. Place on a baking sheet.
  3. In a small saucepan or microwave-safe bowl, melt the chopped chocolate and butter together, stirring until smooth and fully combined. Allow to cool slightly.
  4. In a mixing bowl, combine the sugar, eggs, egg yolks, and vanilla. Whisk until well blended.
  5. Slowly stir in the melted chocolate mixture.
  6. Gently fold in the flour and salt until just combined.
  7. Divide the batter evenly between the prepared ramekins.
  8. Bake for 12 minutes, or until the sides are firm but the center is soft.
  9. Remove from oven and let sit for 1 minute. Carefully invert the ramekins onto warmed plates and let them stand for a moment before lifting off. Dust with powdered sugar and serve with berries and ice cream if desired.
