Ingredients:

  • 1 cup (200g) granulated sugar
  • 6 large eggs
  • 1 can (14 oz or 400ml) sweetened condensed milk
  • 1 can (12 oz or 354ml) evaporated milk
  • 1 tablespoon vanilla extract
  • 1 cup (150g) mixed fresh berries (strawberries, blueberries, raspberries)
  • 2 tablespoons honey or maple syrup (optional)

Instructions:

  1. In a saucepan, heat sugar over medium heat until it melts and turns golden-brown (about 8-10 minutes). Quickly pour caramel into the bottom of the baking dish (or ramekins), tilting to coat the bottom evenly. Set aside to harden.
  2. In a mixing bowl, whisk together eggs and vanilla extract until well combined. Add sweetened condensed milk and evaporated milk. Mix until smooth. Strain the mixture through a fine mesh strainer into another bowl.
  3. Pour the custard mixture over the hardened caramel in the baking dish or ramekins. Place the dish in a roasting pan and fill the pan with hot water until it reaches halfway up the sides of the dish. Bake in a preheated oven at 350°F (175°C) for 40 minutes, or until the flan is set.
  4. Remove from the oven and let cool to room temperature. Refrigerate for at least 2 hours or until completely chilled.
  5. To serve, run a knife around the edges of the flan, invert onto a serving platter, and top with fresh mixed berries. Drizzle with honey or maple syrup if desired.
