Ingredients:

  • 1 ½ cups (190g) all-purpose flour
  • ½ cup (100g) granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup (115g) unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ⅓ cup (80ml) milk
  • 2 cups (300g) fresh strawberries, hulled and sliced
  • 2 tablespoons (25g) granulated sugar
  • 1 cup (240ml) heavy whipping cream
  • 2 tablespoons (15g) powdered sugar
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat the oven to 350°F (175°C) and line the baking dish with parchment paper.
  2. Make the base: whisk together flour, sugar, baking powder, and salt in a bowl.
  3. In another bowl, cream the butter, then add eggs and vanilla and mix until smooth.
  4. Gradually add dry ingredients to the wet mixture, alternating with milk, until just combined.
  5. Pour the batter into the prepared baking dish and spread evenly. Bake for 20-25 minutes until a toothpick comes out clean. Cool completely.
  6. Toss sliced strawberries with 2 tablespoons sugar and let sit for 15 minutes.
  7. Whip the cream with powdered sugar and vanilla until soft peaks form.
  8. Spread whipped cream over the cooled base, top with marinated strawberries and their juices.
  9. Chill for at least 30 minutes before slicing into squares.
