Ingredients:
- 1 ½ cups (190g) all-purpose flour
- ½ cup (100g) granulated sugar
- 1 teaspoon baking powder
- ½ teaspoon salt
- ½ cup (115g) unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- ⅓ cup (80ml) milk
- 2 cups (300g) fresh strawberries, hulled and sliced
- 2 tablespoons (25g) granulated sugar
- 1 cup (240ml) heavy whipping cream
- 2 tablespoons (15g) powdered sugar
- 1 teaspoon vanilla extract
Instructions:
- Preheat the oven to 350°F (175°C) and line the baking dish with parchment paper.
- Make the base: whisk together flour, sugar, baking powder, and salt in a bowl.
- In another bowl, cream the butter, then add eggs and vanilla and mix until smooth.
- Gradually add dry ingredients to the wet mixture, alternating with milk, until just combined.
- Pour the batter into the prepared baking dish and spread evenly. Bake for 20-25 minutes until a toothpick comes out clean. Cool completely.
- Toss sliced strawberries with 2 tablespoons sugar and let sit for 15 minutes.
- Whip the cream with powdered sugar and vanilla until soft peaks form.
- Spread whipped cream over the cooled base, top with marinated strawberries and their juices.
- Chill for at least 30 minutes before slicing into squares.
