Ingredients:

  • 3 cups (375g) all-purpose flour
  • 1 teaspoon (5g) salt
  • 1 teaspoon (4g) sugar
  • 2 teaspoons (7g) instant yeast
  • 1 tablespoon (15ml) olive oil
  • 1 cup (240ml) warm water

Instructions:

  1. Combine warm water, sugar, and yeast in a bowl. Let sit for 5 minutes until frothy.
  2. In a large mixing bowl, whisk flour and salt together. Create a well in the center. Add yeast mixture and olive oil. Mix until a shaggy dough forms.
  3. Transfer dough to a floured surface. Knead for about 8-10 minutes until smooth and elastic.
  4. Place dough in an oiled bowl. Cover with a damp cloth and let rise for 1 hour, or until doubled in size.
  5. Punch down the dough and divide it into 6-8 equal portions. Roll each into a ball and flatten to about ¼ inch thickness.
  6. Heat a non-stick frying pan over medium-high heat. Cook each pita for 2-3 minutes on each side until puffed and golden brown.
  7. Transfer cooked pitas to a plate and cover with a clean towel to keep warm and soft.
