Ingredients:

  • 2 cups sushi rice
  • 2 1/2 cups water
  • 1/3 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1 can Spam
  • 2 tablespoons soy sauce
  • 1 tablespoon mirin
  • 1 teaspoon sesame oil (optional)
  • 4 sheets nori, cut in half
  • Sesame seeds for garnish (optional)

Instructions:

  1. Rinse sushi rice under cold water until the water runs clear.
  2. Combine rice and water in a rice cooker or pot and cook according to the manufacturers instructions.
  3. In a small bowl, mix rice vinegar, sugar, and salt until dissolved.
  4. Once the rice is cooked, gently combine it with the vinegar mixture and allow it to cool.
  5. Slice the Spam into 8 rectangular pieces.
  6. In a frying pan over medium heat, add the Spam slices and cook until browned on both sides.
  7. Drizzle soy sauce and mirin over Spam, cooking until well coated. Remove from heat.
  8. Place a piece of nori on a flat surface, shiny side down.
  9. Use the musubi maker to add a layer of rice, followed by a slice of Spam, and top with another layer of rice.
  10. Press down to shape, then wrap the nori around the rice and Spam. Let it sit for a minute to set.
  11. Slice the musubi into convenient pieces. Optionally, sprinkle with sesame seeds before serving.
