Ingredients:
- 1 pound (450g) boneless, skinless chicken breasts, cut into 1-inch cubes
- ¼ cup (60ml) olive oil
- Juice of 1 lemon (about 3 tablespoons)
- 4 cloves garlic, minced
- 2 teaspoons dried oregano
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon smoked paprika (optional)
- Wooden or metal skewers (if using wooden, soak in water for 30 minutes prior)
- Fresh vegetables (bell peppers, red onion, cherry tomatoes) for skewering
- Tzatziki sauce (store-bought or homemade)
Instructions:
- In a mixing bowl, combine olive oil, lemon juice, garlic, oregano, salt, pepper, and smoked paprika. Whisk until well combined.
- Add chicken cubes to the marinade. Cover and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).
- Heat your grill or grill pan over medium-high heat.
- Thread marinated chicken and vegetables onto skewers, alternating as desired.
- Place skewers on the grill and cook, turning occasionally, until chicken is cooked through (internal temperature should reach 165°F/75°C), about 10-15 minutes.
- Serve hot with a side of tzatziki and your favorite Greek accompaniments.
