Ingredients:

  • 4 cups fresh strawberries, hulled and quartered (about 600g)
  • 1/2 cup granulated sugar (100g)
  • 2 tablespoons fresh lemon juice (30ml)
  • 1 teaspoon vanilla extract (5ml) (optional)

Instructions:

  1. Hull and quarter the strawberries.
  2. In a medium saucepan, combine strawberries, sugar, lemon juice, and vanilla extract (if using).
  3. Cook over medium heat, stirring gently until the sugar dissolves.
  4. Bring to a gentle simmer and cook for about 10-15 minutes, stirring occasionally, until the mixture thickens and the strawberries are soft.
  5. Remove from heat, let cool slightly, then transfer to a bowl. Chill in the refrigerator if desired before serving.
