Ingredients:
- 2½ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- ¾ cup unsalted butter, room temperature
- 1 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 tsp almond extract (optional)
- ½ cup cake mix (vanilla or yellow)
- Extra granulated sugar for rolling
Instructions:
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Whisk together flour, baking powder, baking soda, and salt in a bowl. Set aside.
- Cream butter and sugar in a large bowl until light and fluffy.
- Add the egg, vanilla, and almond extracts; mix until well combined.
- Gradually add the dry ingredients, mixing until just combined.
- Fold in the cake mix until smooth; the dough will be slightly sticky.
- Chill the dough in the fridge for 30 minutes.
- Scoop tablespoonfuls of dough and roll in sugar. Place on prepared sheets.
- Bake for 10-12 minutes, until edges are lightly golden.
- Cool on the sheet for a few minutes before transferring to a wire rack to cool completely.
