Ingredients:

  • 2½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ¾ cup unsalted butter, room temperature
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tsp almond extract (optional)
  • ½ cup cake mix (vanilla or yellow)
  • Extra granulated sugar for rolling

Instructions:

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Whisk together flour, baking powder, baking soda, and salt in a bowl. Set aside.
  3. Cream butter and sugar in a large bowl until light and fluffy.
  4. Add the egg, vanilla, and almond extracts; mix until well combined.
  5. Gradually add the dry ingredients, mixing until just combined.
  6. Fold in the cake mix until smooth; the dough will be slightly sticky.
  7. Chill the dough in the fridge for 30 minutes.
  8. Scoop tablespoonfuls of dough and roll in sugar. Place on prepared sheets.
  9. Bake for 10-12 minutes, until edges are lightly golden.
  10. Cool on the sheet for a few minutes before transferring to a wire rack to cool completely.
