Ingredients:
- 1 lb fresh string beans, ends trimmed
- 2 cups neutral oil for frying
- 2 tbsp garlic, finely minced
- 1/2 tsp sea salt
- 1/4 tsp sugar
- 1/2 tsp mushroom bouillon powder
- 1 tsp toasted sesame oil
Instructions:
- Use a clean kitchen towel to ensure every bean is bone dry. Note: Water on the beans will cause the oil to pop and splatter.
- Pour 2 cups of neutral oil into your wok and heat to 375°F.
- Carefully lower the beans into the oil in two batches.
- Fry for 45 to 60 seconds until the skins are blistered and pale green.
- Use your spider strainer to move the beans to a paper towel lined plate.
- Pour out the frying oil into a heat proof container, leaving only 1 tablespoon in the pan.
- Add the 2 tbsp garlic to the hot wok until fragrant but not browned.
- Toss the fried beans back into the wok with the garlic.
- Sprinkle in 1/2 tsp salt, 1/4 tsp sugar, and 1/2 tsp mushroom bouillon.
- Drizzle 1 tsp sesame oil over the beans and toss once more until everything is coated and glossy.
