Instructions:
- In a medium saucepan, combine butter, sugar, and milk.
- Bring the mixture to a rolling boil over medium heat, stirring constantly to prevent sticking.
- Once boiling, continue to boil for exactly 1 minute, stirring continuously. This step is crucial for the right texture.
- Remove the saucepan from the heat immediately.
- Stir in the peanut butter and vanilla extract until smooth and completely combined.
- Add the quick-cooking oats and salt. Stir until all oats are evenly coated with the peanut butter mixture.
- Drop spoonfuls of the mixture onto a baking sheet lined with parchment paper or a silicone mat.
- Allow the cookies to cool and set completely in the refrigerator for at least 30 minutes.
