  • 3 cups quick-cooking oats (240g)
  • Pinch of salt

Instructions:

  1. In a medium saucepan, combine butter, sugar, and milk.
  2. Bring the mixture to a rolling boil over medium heat, stirring constantly to prevent sticking.
  3. Once boiling, continue to boil for exactly 1 minute, stirring continuously. This step is crucial for the right texture.
  4. Remove the saucepan from the heat immediately.
  5. Stir in the peanut butter and vanilla extract until smooth and completely combined.
  6. Add the quick-cooking oats and salt. Stir until all oats are evenly coated with the peanut butter mixture.
  7. Drop spoonfuls of the mixture onto a baking sheet lined with parchment paper or a silicone mat.
  8. Allow the cookies to cool and set completely in the refrigerator for at least 30 minutes.
