Ingredients:

  • 1 cup (240ml) heavy cream, cold (at least 36% milk fat)
  • 1/4 cup (30g) powdered sugar, sifted
  • 3 tablespoons (21g) instant pudding mix, (vanilla, white chocolate, or flavor of choice), unprepared

Instructions:

  1. Place the mixing bowl and whisk attachment (or beaters) in the freezer for at least 15 minutes.
  2. In the chilled bowl, combine heavy cream, powdered sugar, and instant pudding mix.
  3. Begin whipping on low speed to combine. Then, increase the speed to medium-high and whip until stiff peaks form. Watch carefully, as over-whipping can turn it grainy.
  4. Frost your cake or cupcakes immediately after whipping. The frosting is best used right away.
