Ingredients:
- 1 cup (240ml) heavy cream, cold (at least 36% milk fat)
- 1/4 cup (30g) powdered sugar, sifted
- 3 tablespoons (21g) instant pudding mix, (vanilla, white chocolate, or flavor of choice), unprepared
Instructions:
- Place the mixing bowl and whisk attachment (or beaters) in the freezer for at least 15 minutes.
- In the chilled bowl, combine heavy cream, powdered sugar, and instant pudding mix.
- Begin whipping on low speed to combine. Then, increase the speed to medium-high and whip until stiff peaks form. Watch carefully, as over-whipping can turn it grainy.
- Frost your cake or cupcakes immediately after whipping. The frosting is best used right away.
