Ingredients:

  • 2 medium Granny Smith apples, peeled and finely diced
  • 1 tbsp lemon juice
  • 1 tsp ground cinnamon
  • 2 tbsp light brown sugar
  • 1 ½ cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 ½ tsp baking powder
  • 1/2 tsp kosher salt
  • 1/2 cup whole milk
  • 1 large egg, room temperature
  • 1 tsp pure vanilla extract
  • 2 cups neutral oil for frying
  • 1 ½ cups powdered sugar
  • 2 tbsp whole milk (for glaze)
  • 1/2 tsp vanilla extract (for glaze)

Instructions:

  1. Toss the finely diced apples with lemon juice, 2 tablespoons of brown sugar, and 1 teaspoon of cinnamon. Let sit for 5 minutes to macerate.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
  3. In a separate container, whisk 1/2 cup milk, the egg, and 1 teaspoon vanilla extract. Pour the wet mixture into the dry ingredients and stir until just combined.
  4. Gently fold in the spiced apples and any accumulated juices into the batter, taking care not to over-mix.
  5. Heat 2 inches of oil in a heavy-bottomed pot to 350°F (176°C). Use a 1-tablespoon scoop to drop batter into the hot oil.
  6. Fry in batches for approximately 2 minutes per side until a deep mahogany color is reached. Drain on a wire rack.
  7. Whisk powdered sugar, 2 tablespoons milk, and 1/2 teaspoon vanilla to create a glaze. Dip the warm fritters into the glaze and let set.
