Ingredients:
- 2 medium Granny Smith apples, peeled and finely diced
- 1 tbsp lemon juice
- 1 tsp ground cinnamon
- 2 tbsp light brown sugar
- 1 ½ cups all-purpose flour
- 1/4 cup granulated sugar
- 1 ½ tsp baking powder
- 1/2 tsp kosher salt
- 1/2 cup whole milk
- 1 large egg, room temperature
- 1 tsp pure vanilla extract
- 2 cups neutral oil for frying
- 1 ½ cups powdered sugar
- 2 tbsp whole milk (for glaze)
- 1/2 tsp vanilla extract (for glaze)
Instructions:
- Toss the finely diced apples with lemon juice, 2 tablespoons of brown sugar, and 1 teaspoon of cinnamon. Let sit for 5 minutes to macerate.
- In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
- In a separate container, whisk 1/2 cup milk, the egg, and 1 teaspoon vanilla extract. Pour the wet mixture into the dry ingredients and stir until just combined.
- Gently fold in the spiced apples and any accumulated juices into the batter, taking care not to over-mix.
- Heat 2 inches of oil in a heavy-bottomed pot to 350°F (176°C). Use a 1-tablespoon scoop to drop batter into the hot oil.
- Fry in batches for approximately 2 minutes per side until a deep mahogany color is reached. Drain on a wire rack.
- Whisk powdered sugar, 2 tablespoons milk, and 1/2 teaspoon vanilla to create a glaze. Dip the warm fritters into the glaze and let set.
