Ingredients:

  • 1 cup (120g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup (115g) unsalted butter, softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup (120ml) milk
  • 2 cups (480ml) whole milk
  • 1/2 cup (100g) granulated sugar
  • 1/4 cup (30g) cornstarch
  • 1/4 tsp salt
  • 4 large egg yolks
  • 2 tbsp (30g) unsalted butter
  • 1 tsp vanilla extract
  • 1 cup (180g) semisweet chocolate chips
  • 1/2 cup (120ml) heavy cream

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together flour, sugar, baking powder, and salt.
  3. Add softened butter, eggs, vanilla, and milk; beat until smooth.
  4. Divide batter between prepared cake pans and bake for 25 minutes or until a toothpick comes out clean. Cool in pans for 10 minutes, then transfer to a rack to cool completely.
  5. In a saucepan, heat milk, sugar, cornstarch, and salt until simmering. In a separate bowl, whisk egg yolks, then temper with the hot milk mixture. Return to the saucepan, cook until thickened. Stir in butter and vanilla, then chill.
  6. In a double boiler or microwave, heat cream until hot but not boiling. Pour over chocolate chips, let sit for a few minutes, then stir until smooth.
  7. Place one cake layer on a serving plate, spread with pastry cream, then top with the second cake layer. Pour chocolate ganache over the top, letting it drip down the sides.
  8. Chill the assembled pie for at least 30 minutes to set before slicing.
