Ingredients:
- 1 cup (120g) all-purpose flour
- 1 cup (200g) granulated sugar
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup (115g) unsalted butter, softened
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup (120ml) milk
- 2 cups (480ml) whole milk
- 1/2 cup (100g) granulated sugar
- 1/4 cup (30g) cornstarch
- 1/4 tsp salt
- 4 large egg yolks
- 2 tbsp (30g) unsalted butter
- 1 tsp vanilla extract
- 1 cup (180g) semisweet chocolate chips
- 1/2 cup (120ml) heavy cream
Instructions:
- Preheat the oven to 350°F (175°C).
- In a bowl, whisk together flour, sugar, baking powder, and salt.
- Add softened butter, eggs, vanilla, and milk; beat until smooth.
- Divide batter between prepared cake pans and bake for 25 minutes or until a toothpick comes out clean. Cool in pans for 10 minutes, then transfer to a rack to cool completely.
- In a saucepan, heat milk, sugar, cornstarch, and salt until simmering. In a separate bowl, whisk egg yolks, then temper with the hot milk mixture. Return to the saucepan, cook until thickened. Stir in butter and vanilla, then chill.
- In a double boiler or microwave, heat cream until hot but not boiling. Pour over chocolate chips, let sit for a few minutes, then stir until smooth.
- Place one cake layer on a serving plate, spread with pastry cream, then top with the second cake layer. Pour chocolate ganache over the top, letting it drip down the sides.
- Chill the assembled pie for at least 30 minutes to set before slicing.
