Ingredients:
- 4 medium-sized carrots (approximately 1 lb or 450g)
- 3 tablespoons extra-virgin olive oil (45ml)
- 2 tablespoons soy sauce (30ml)
- 1 tablespoon liquid smoke (15ml)
- 1 tablespoon maple syrup (15ml)
- 1 teaspoon smoked paprika (5g)
- ½ teaspoon black pepper (2g)
- 1 teaspoon salt (5g)
- Bagels or crackers (optional)
- Cream cheese or dairy-free alternative (optional)
- Capers, red onions, and fresh dill (optional toppings)
Instructions:
- Rinse and peel the carrots. Use a mandoline or sharp knife to slice carrots into thin strips or sashimi style if preferred.
- In a mixing bowl, combine olive oil, soy sauce, liquid smoke, maple syrup, smoked paprika, black pepper, and salt. Whisk until well combined.
- Place carrot slices into an airtight container or zip-top bag. Pour the marinade over the carrots, ensuring even coating. Seal the container/bag and refrigerate for 4-6 hours (or overnight for stronger flavor).
- Once marinated, remove carrots from the marinade and allow excess to drip off. Serve on toasted bagels with cream cheese and your choice of toppings.
