Ingredients:

  • 4 medium-sized carrots (approximately 1 lb or 450g)
  • 3 tablespoons extra-virgin olive oil (45ml)
  • 2 tablespoons soy sauce (30ml)
  • 1 tablespoon liquid smoke (15ml)
  • 1 tablespoon maple syrup (15ml)
  • 1 teaspoon smoked paprika (5g)
  • ½ teaspoon black pepper (2g)
  • 1 teaspoon salt (5g)
  • Bagels or crackers (optional)
  • Cream cheese or dairy-free alternative (optional)
  • Capers, red onions, and fresh dill (optional toppings)

Instructions:

  1. Rinse and peel the carrots. Use a mandoline or sharp knife to slice carrots into thin strips or sashimi style if preferred.
  2. In a mixing bowl, combine olive oil, soy sauce, liquid smoke, maple syrup, smoked paprika, black pepper, and salt. Whisk until well combined.
  3. Place carrot slices into an airtight container or zip-top bag. Pour the marinade over the carrots, ensuring even coating. Seal the container/bag and refrigerate for 4-6 hours (or overnight for stronger flavor).
  4. Once marinated, remove carrots from the marinade and allow excess to drip off. Serve on toasted bagels with cream cheese and your choice of toppings.
