Ingredients:
- 1 cup warm milk
- 1/4 cup honey
- 2 1/4 tsp active dry yeast
- 3 tbsp melted butter
- 1 tsp salt
- 3.25 cups bread flour
- 1/2 cup coconut sugar
- 2 tbsp ground cinnamon
- 2 tbsp melted butter
Instructions:
- Combine warm milk and honey in a mixing bowl. Sprinkle yeast on top, stir gently, and let sit for 5–10 minutes until frothy.
- Stir in melted butter and salt. Gradually add bread flour one cup at a time, mixing until a shaggy dough forms.
- Turn dough onto a floured surface and knead for 5–7 minutes until smooth and springy.
- Place dough in a greased bowl, cover with a damp cloth, and let rise in a warm area for 60–90 minutes until doubled in size.
- Punch down the dough and roll into a 9x15 inch rectangle. Brush with melted butter and sprinkle evenly with the coconut sugar and cinnamon mixture.
- Roll the dough up lengthwise into a tight log and place seam-side down in a greased loaf pan.
- Cover and let rise for another 30–45 minutes.
- Bake at 350°F (175°C) for 35–40 minutes until the crust is mahogany-colored and the loaf sounds hollow when tapped.
