Ingredients:
- 1 lb Medjool dates, pitted
- 4 cups filtered water
- 1 tsp fresh lemon juice
- 1 pinch sea salt
Instructions:
- Place the pitted dates and filtered water in a large heavy-bottomed saucepan. Bring to a boil, then reduce to a simmer for 20 minutes until the dates are very soft and pale.
- Transfer the date and water mixture into a high-speed blender. Blend on high until completely smooth.
- Strain the blended pulp through a nut milk bag or fine-mesh strainer over a bowl, squeezing firmly to extract all the liquid nectar.
- Return the extracted liquid to the cleaned saucepan. Simmer over medium-low heat for 25–30 minutes, stirring occasionally, until the syrup darkens and reaches the consistency of warm maple syrup.
- Stir in the lemon juice and sea salt. Allow to cool completely before transferring to a glass jar for storage.
