Ingredients:

  • 1 lb Medjool dates, pitted
  • 4 cups filtered water
  • 1 tsp fresh lemon juice
  • 1 pinch sea salt

Instructions:

  1. Place the pitted dates and filtered water in a large heavy-bottomed saucepan. Bring to a boil, then reduce to a simmer for 20 minutes until the dates are very soft and pale.
  2. Transfer the date and water mixture into a high-speed blender. Blend on high until completely smooth.
  3. Strain the blended pulp through a nut milk bag or fine-mesh strainer over a bowl, squeezing firmly to extract all the liquid nectar.
  4. Return the extracted liquid to the cleaned saucepan. Simmer over medium-low heat for 25–30 minutes, stirring occasionally, until the syrup darkens and reaches the consistency of warm maple syrup.
  5. Stir in the lemon juice and sea salt. Allow to cool completely before transferring to a glass jar for storage.
