Ingredients:
- 1 lb ground beef (80/20)
- 0.5 lb ground pork
- 3/4 cup Panko breadcrumbs
- 1/3 cup whole milk
- 1 large egg, lightly beaten
- 1/2 cup Parmesan cheese, freshly grated
- 1/4 cup fresh parsley, finely chopped
- 3 cloves garlic, minced into a paste
- 1 tsp dried oregano
- 1.5 tsp kosher salt
- 0.5 tsp black pepper, freshly ground
Instructions:
- Preheat your oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper or a silicone mat.
- In a large mixing bowl, combine the Panko breadcrumbs, milk, egg, minced garlic, oregano, salt, and pepper. Stir and let sit for 5 minutes to allow the breadcrumbs to fully hydrate.
- Add the ground beef, ground pork, Parmesan cheese, and fresh parsley to the bowl. Use your hands or a fork to gently mix the ingredients until just combined, being careful not to overwork the meat.
- Using a small cookie scoop or a tablespoon, portion the mixture into approximately 24-28 balls (about 1.5 inches in diameter).
- Place the meatballs on the prepared baking sheet, spaced evenly apart.
- Bake for 18 minutes, or until the exterior is browned and the internal temperature reaches 160°F (71°C).
