Ingredients:

  • 1 lb ground beef (80/20)
  • 0.5 lb ground pork
  • 3/4 cup Panko breadcrumbs
  • 1/3 cup whole milk
  • 1 large egg, lightly beaten
  • 1/2 cup Parmesan cheese, freshly grated
  • 1/4 cup fresh parsley, finely chopped
  • 3 cloves garlic, minced into a paste
  • 1 tsp dried oregano
  • 1.5 tsp kosher salt
  • 0.5 tsp black pepper, freshly ground

Instructions:

  1. Preheat your oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper or a silicone mat.
  2. In a large mixing bowl, combine the Panko breadcrumbs, milk, egg, minced garlic, oregano, salt, and pepper. Stir and let sit for 5 minutes to allow the breadcrumbs to fully hydrate.
  3. Add the ground beef, ground pork, Parmesan cheese, and fresh parsley to the bowl. Use your hands or a fork to gently mix the ingredients until just combined, being careful not to overwork the meat.
  4. Using a small cookie scoop or a tablespoon, portion the mixture into approximately 24-28 balls (about 1.5 inches in diameter).
  5. Place the meatballs on the prepared baking sheet, spaced evenly apart.
  6. Bake for 18 minutes, or until the exterior is browned and the internal temperature reaches 160°F (71°C).
