Ingredients:

  • 1.5 pounds (680 g) ground beef (80% lean)
  • 1 cup (100 g) breadcrumbs
  • 1/2 cup (75 g) onion, finely chopped
  • 2 large eggs, beaten
  • 1/4 cup (60 ml) milk
  • 2 teaspoons (10 g) salt
  • 1 teaspoon (5 g) black pepper
  • 1 teaspoon (5 g) garlic powder
  • 1 teaspoon (5 g) dried oregano
  • 1/2 cup (120 ml) ketchup
  • 1/4 cup (50 g) brown sugar, packed
  • 1 tablespoon (15 ml) Worcestershire sauce
  • 1 tablespoon (15 ml) apple cider vinegar
  • 1 teaspoon (5 g) smoked paprika (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the ground beef, breadcrumbs, onion, eggs, milk, salt, pepper, garlic powder, and oregano. Mix until just combined – do not overmix.
  3. Transfer the meat mixture to a loaf pan, shaping it to fit snugly.
  4. In a separate bowl, whisk together the ketchup, brown sugar, Worcestershire sauce, apple cider vinegar, and smoked paprika (if using).
  5. Spoon half of the glaze over the top of the meatloaf, spreading evenly.
  6. Place the loaf pan in the preheated oven and bake for 50 minutes.
  7. After 50 minutes, remove the meatloaf from the oven, spread the remaining glaze on top, and return it to the oven for an additional 10-15 minutes, or until the internal temperature reaches 160°F (71°C).
  8. Remove from the oven and allow to rest for 10 minutes before slicing.
