Ingredients:
- 2 cups (480g) Plain Greek Yogurt, full-fat or low-fat
- ½ cup (120ml) Whole Milk
- ½ cup (100g) Granulated Sugar
- ¼ cup (60ml) Freshly Squeezed Lemon Juice
- 1 tablespoon (6g) Lemon Zest
- Pinch of Sea Salt
- Optional: 1 teaspoon Vanilla Extract
Instructions:
- In a large mixing bowl, whisk together the Greek yogurt, milk, sugar, lemon juice, lemon zest, salt, and vanilla extract (if using). Whisk until the sugar is completely dissolved and the mixture is smooth.
- Taste the mixture and adjust the sweetness or lemon flavor as needed. Add more sugar if it's too tart, or a little more lemon juice for extra zing.
- Cover the bowl with plastic wrap or a lid and chill in the refrigerator for at least 30 minutes. This helps the mixture freeze more evenly.
- Pour the chilled mixture into a freezer-safe container. Cover tightly and freeze for at least 4 hours, or preferably overnight.
- Every hour for the first 2-3 hours, remove the container from the freezer and use a fork to break up any ice crystals that have formed. This helps create a smoother texture. Return to the freezer immediately.
- Let the frozen yogurt sit at room temperature for a few minutes before scooping. Serve immediately and enjoy! If it's too hard to scoop, let it thaw a bit longer.
