Ingredients:

  • 1 package (3 oz) strawberry flavored gelatin powder
  • 1 can (20 oz) crushed pineapple in 100% juice
  • 1 package (3.4 oz) instant vanilla pudding mix
  • 1 container (8 oz) whipped topping, thawed
  • 2 cups mini marshmallows
  • 0.5 cup small curd cottage cheese
  • 1 lb fresh strawberries, hulled and quartered
  • 0.5 cup chopped pecans

Instructions:

  1. Place the crushed pineapple in a fine-mesh strainer over a sink. Press down firmly with the back of a spoon to extract as much juice as possible, reserving 2 tablespoons of the juice.
  2. In a large mixing bowl, combine the drained pineapple and the 2 tablespoons of reserved juice.
  3. Sprinkle the dry strawberry gelatin powder and the instant vanilla pudding mix over the pineapple. Stir vigorously for 2 minutes until the powder is fully dissolved and the mixture is thick.
  4. Gently fold in the thawed whipped topping, mini marshmallows, and cottage cheese using a silicone spatula until no white streaks remain.
  5. Carefully fold in the quartered fresh strawberries and chopped pecans until evenly distributed.
  6. Transfer to an airtight container and refrigerate for at least 2 hours to allow the gelatin to set and the texture to stabilize before serving.
