Ingredients:
- 1 package (3 oz) strawberry flavored gelatin powder
- 1 can (20 oz) crushed pineapple in 100% juice
- 1 package (3.4 oz) instant vanilla pudding mix
- 1 container (8 oz) whipped topping, thawed
- 2 cups mini marshmallows
- 0.5 cup small curd cottage cheese
- 1 lb fresh strawberries, hulled and quartered
- 0.5 cup chopped pecans
Instructions:
- Place the crushed pineapple in a fine-mesh strainer over a sink. Press down firmly with the back of a spoon to extract as much juice as possible, reserving 2 tablespoons of the juice.
- In a large mixing bowl, combine the drained pineapple and the 2 tablespoons of reserved juice.
- Sprinkle the dry strawberry gelatin powder and the instant vanilla pudding mix over the pineapple. Stir vigorously for 2 minutes until the powder is fully dissolved and the mixture is thick.
- Gently fold in the thawed whipped topping, mini marshmallows, and cottage cheese using a silicone spatula until no white streaks remain.
- Carefully fold in the quartered fresh strawberries and chopped pecans until evenly distributed.
- Transfer to an airtight container and refrigerate for at least 2 hours to allow the gelatin to set and the texture to stabilize before serving.
