Ingredients:
- 270g Old Fashioned Rolled Oats
- 45g Plant based Vanilla Protein Powder
- 2 tablespoons Ground Flaxseed Meal
- 1 teaspoon Baking Powder
- 1/2 teaspoon Sea Salt
- 1 teaspoon Ground Cinnamon
- 480ml Unsweetened Almond or Oat Milk
- 80ml Pure Maple Syrup
- 1 teaspoon Apple Cider Vinegar
- 1 teaspoon Vanilla Bean Paste
- 190g Mixed Frozen Berries
- 60g Toasted Chopped Walnuts
Instructions:
- Whisk the almond milk, maple syrup, apple cider vinegar, and flaxseed meal in a large bowl. Let sit for 5 minutes to allow the flax to hydrate and thicken into a binding gel.
- Fold the rolled oats, protein powder, baking powder, salt, and cinnamon into the wet mixture. Stir until no dry pockets remain.
- Incorporate 1 cup of the mixed frozen berries and half of the chopped walnuts into the batter.
- Pour the mixture into a greased 9x9 inch ceramic baking dish. Top with the remaining berries and walnuts, pressing them slightly into the surface.
- Bake at 375°F (190°C) for 30–35 minutes until the edges pull away from the pan and the top is golden brown.
