Ingredients:

  • 270g Old Fashioned Rolled Oats
  • 45g Plant based Vanilla Protein Powder
  • 2 tablespoons Ground Flaxseed Meal
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Sea Salt
  • 1 teaspoon Ground Cinnamon
  • 480ml Unsweetened Almond or Oat Milk
  • 80ml Pure Maple Syrup
  • 1 teaspoon Apple Cider Vinegar
  • 1 teaspoon Vanilla Bean Paste
  • 190g Mixed Frozen Berries
  • 60g Toasted Chopped Walnuts

Instructions:

  1. Whisk the almond milk, maple syrup, apple cider vinegar, and flaxseed meal in a large bowl. Let sit for 5 minutes to allow the flax to hydrate and thicken into a binding gel.
  2. Fold the rolled oats, protein powder, baking powder, salt, and cinnamon into the wet mixture. Stir until no dry pockets remain.
  3. Incorporate 1 cup of the mixed frozen berries and half of the chopped walnuts into the batter.
  4. Pour the mixture into a greased 9x9 inch ceramic baking dish. Top with the remaining berries and walnuts, pressing them slightly into the surface.
  5. Bake at 375°F (190°C) for 30–35 minutes until the edges pull away from the pan and the top is golden brown.
