Ingredients:

  • 3 large overripe bananas, mashed (340g)
  • 1/2 cup unsalted butter, melted and cooled (115g)
  • 3/4 cup light brown sugar, packed (150g)
  • 1 large egg, room temperature
  • 1 tsp pure vanilla extract (5ml)
  • 1 1/2 cups all-purpose flour (190g)
  • 1 tsp baking soda (5g)
  • 1/2 tsp salt (2g)
  • 1 1/2 tsp ground cinnamon (4g)
  • 1/4 tsp ground nutmeg (1g)
  • 1/4 cup all-purpose flour (30g)
  • 1/4 cup brown sugar (50g)
  • 2 tbsp cold unsalted butter, cubed (28g)
  • 1/2 tsp ground cinnamon (2g)

Instructions:

  1. Preheat the oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  2. In a large bowl, mash the bananas until smooth. Stir in the melted butter and brown sugar until integrated, then whisk in the egg and vanilla until glossy.
  3. Sift the flour, baking soda, salt, cinnamon, and nutmeg directly into the wet ingredients. Gently fold the flour in using a spatula until just combined.
  4. In a small bowl, combine the crumble ingredients (flour, brown sugar, cold butter, and cinnamon) and mix until crumbly.
  5. Pour the batter into the prepared pan and top with the cinnamon crumble.
  6. Bake for 60-65 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
