Ingredients:
- 3 large overripe bananas, mashed (340g)
- 1/2 cup unsalted butter, melted and cooled (115g)
- 3/4 cup light brown sugar, packed (150g)
- 1 large egg, room temperature
- 1 tsp pure vanilla extract (5ml)
- 1 1/2 cups all-purpose flour (190g)
- 1 tsp baking soda (5g)
- 1/2 tsp salt (2g)
- 1 1/2 tsp ground cinnamon (4g)
- 1/4 tsp ground nutmeg (1g)
- 1/4 cup all-purpose flour (30g)
- 1/4 cup brown sugar (50g)
- 2 tbsp cold unsalted butter, cubed (28g)
- 1/2 tsp ground cinnamon (2g)
Instructions:
- Preheat the oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
- In a large bowl, mash the bananas until smooth. Stir in the melted butter and brown sugar until integrated, then whisk in the egg and vanilla until glossy.
- Sift the flour, baking soda, salt, cinnamon, and nutmeg directly into the wet ingredients. Gently fold the flour in using a spatula until just combined.
- In a small bowl, combine the crumble ingredients (flour, brown sugar, cold butter, and cinnamon) and mix until crumbly.
- Pour the batter into the prepared pan and top with the cinnamon crumble.
- Bake for 60-65 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
