Ingredients:
- 3 large over-ripe bananas, mashed (approx. 1 ½ cups / 340g)
- ½ cup (115g) unsalted butter, browned and cooled
- ½ cup (100g) coconut sugar or light brown sugar
- 1 large egg, room temperature
- 1 tsp (5ml) vanilla extract
- 1 ½ cups (190g) white whole wheat flour
- 1 tsp (5g) baking soda
- ½ tsp (3g) salt
- 1 tbsp (6g) ground cinnamon
- ½ tsp (1g) ground nutmeg
- ¼ tsp (0.5g) ground cloves
- ½ cup (60g) chopped walnuts
- 1 tsp (2g) cinnamon sugar for dusting
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line it with parchment paper.
- In a large mixing bowl, mash the bananas until they are chunky-smooth.
- Whisk in the browned and cooled butter and coconut sugar until the mixture looks velvety.
- Stir in the egg and vanilla extract until fully combined.
- Sift the white whole wheat flour, baking soda, salt, cinnamon, nutmeg, and cloves directly into the wet ingredients.
- Using a spatula, gently fold the mixture together until no streaks of flour remain, being careful not to over-mix.
- Fold in the chopped walnuts.
- Pour the batter into the prepared pan and smooth the top. Sprinkle with cinnamon sugar.
- Bake for 50–60 minutes, or until the top is deep mahogany and a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
