Ingredients:

  • 3 large over-ripe bananas, mashed (approx. 1 ½ cups / 340g)
  • ½ cup (115g) unsalted butter, browned and cooled
  • ½ cup (100g) coconut sugar or light brown sugar
  • 1 large egg, room temperature
  • 1 tsp (5ml) vanilla extract
  • 1 ½ cups (190g) white whole wheat flour
  • 1 tsp (5g) baking soda
  • ½ tsp (3g) salt
  • 1 tbsp (6g) ground cinnamon
  • ½ tsp (1g) ground nutmeg
  • ¼ tsp (0.5g) ground cloves
  • ½ cup (60g) chopped walnuts
  • 1 tsp (2g) cinnamon sugar for dusting

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line it with parchment paper.
  2. In a large mixing bowl, mash the bananas until they are chunky-smooth.
  3. Whisk in the browned and cooled butter and coconut sugar until the mixture looks velvety.
  4. Stir in the egg and vanilla extract until fully combined.
  5. Sift the white whole wheat flour, baking soda, salt, cinnamon, nutmeg, and cloves directly into the wet ingredients.
  6. Using a spatula, gently fold the mixture together until no streaks of flour remain, being careful not to over-mix.
  7. Fold in the chopped walnuts.
  8. Pour the batter into the prepared pan and smooth the top. Sprinkle with cinnamon sugar.
  9. Bake for 50–60 minutes, or until the top is deep mahogany and a toothpick inserted into the center comes out clean or with a few moist crumbs.
  10. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
