Ingredients:

  • 1 packet Samyang Buldak Ramen (original flavour)
  • 2 cups (475ml) water
  • 1 tablespoon (15ml) vegetable oil
  • 1 clove garlic, minced
  • 1/2 inch (1.25 cm) ginger, minced
  • 1/4 cup (25g) finely chopped onion
  • 1/4 cup (60g) thinly sliced crimini mushrooms
  • 1/4 cup (25g) finely chopped spring onions
  • 1 large egg
  • 1 teaspoon (5ml) soy sauce
  • 1/2 teaspoon (2.5ml) sesame oil
  • Sriracha sauce, to taste (optional)
  • Sesame seeds, for garnish (optional)

Instructions:

  1. Heat vegetable oil in a small frying pan over medium heat. Sauté garlic, ginger, and onion until fragrant (about 1 minute). Add mushrooms and cook until softened (about 2 minutes). Remove from heat.
  2. Bring water to a rolling boil in the saucepan. Add the Samyang Buldak Ramen noodles and cook according to package directions (usually about 5 minutes), stirring occasionally to separate the noodles.
  3. Drain most of the water, leaving about 2-3 tablespoons of cooking liquid. Add the contents of the Samyang Buldak Ramen flavour packet and the contents of the dried vegetable packet to the saucepan. Stir well to combine.
  4. Add the sautéed garlic, ginger, onion, and mushrooms to the noodles. Stir to combine and coat the noodles in the flavourful sauce.
  5. Push the noodles to one side of the pan, creating a small space. Crack the egg into the empty space and cook until the white is set but the yolk is still runny (about 1-2 minutes).
  6. Transfer the noodles and egg to a serving bowl. Drizzle with soy sauce and sesame oil. Garnish with chopped spring onions and sesame seeds (if using). Add Sriracha for an extra kick, if desired.
