Ingredients:
- 1 cup (160g) canned mandarin oranges, drained
- 1 cup (160g) canned pineapple tidbits, drained
- 1 cup (120g) mini marshmallows
- 1 cup (100g) sweetened shredded coconut
- 1 cup (240g) full-fat sour cream
Instructions:
- Place the mandarin oranges and pineapple tidbits in a fine-mesh strainer and press down lightly with a spoon to remove all excess syrup.
- In a large mixing bowl, stir together the sour cream and shredded coconut until smooth.
- Gently fold in the drained oranges and pineapples using a spatula until the fruit is evenly coated.
- Fold in the mini marshmallows until they are distributed but not crushed.
- Transfer the mixture to an airtight container or cover the bowl tightly with plastic wrap and refrigerate for at least 6 hours (or overnight).
