Ingredients:

  • 1 cup (160g) canned mandarin oranges, drained
  • 1 cup (160g) canned pineapple tidbits, drained
  • 1 cup (120g) mini marshmallows
  • 1 cup (100g) sweetened shredded coconut
  • 1 cup (240g) full-fat sour cream

Instructions:

  1. Place the mandarin oranges and pineapple tidbits in a fine-mesh strainer and press down lightly with a spoon to remove all excess syrup.
  2. In a large mixing bowl, stir together the sour cream and shredded coconut until smooth.
  3. Gently fold in the drained oranges and pineapples using a spatula until the fruit is evenly coated.
  4. Fold in the mini marshmallows until they are distributed but not crushed.
  5. Transfer the mixture to an airtight container or cover the bowl tightly with plastic wrap and refrigerate for at least 6 hours (or overnight).
