Ingredients:

  • 320g All-purpose flour
  • 1 tsp Fine sea salt
  • 1 tbsp Granulated sugar
  • 227g Unsalted high-fat European-style butter, cubed and frozen
  • 120ml Ice water
  • 1 tsp Apple cider vinegar

Instructions:

  1. Combine 320g flour, 1 tsp salt, and 1 tbsp sugar in a large bowl.
  2. Incorporate the frozen 227g butter into the flour until the mixture resembles coarse crumbs with some pea sized chunks.
  3. Mix 120ml ice water with 1 tsp apple cider vinegar.
  4. Drizzle in the water 1 tablespoon at a time, tossing with a fork until the dough just starts to clump together.
  5. Divide the dough in half and gently press into two flat discs.
  6. Wrap tightly and refrigerate for at least 1 hour.
  7. Roll the dough on a floured surface until it is 3mm thick and wider than your pie dish.
  8. Place in the dish, trim the excess, and pinch the edges until you have a decorative border.
  9. Put the prepared crust back in the fridge for 15 minutes before baking.
