Ingredients:

  • 1 cup plain Greek yogurt (full-fat or 2%)
  • 1 large egg
  • 1 tsp pure vanilla extract
  • 0.5 cup maple syrup or honey
  • 0.5 cup unsweetened cocoa powder, sifted
  • 0.5 tsp baking powder
  • 0.25 tsp sea salt
  • 0.33 cup dark chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C). Line an 8x8-inch square baking pan with parchment paper, leaving an overhang on two sides for easy removal.
  2. In a large mixing bowl, whisk together the Greek yogurt, egg, vanilla extract, and liquid sweetener (maple syrup or honey) until the mixture is completely smooth and pale yellow.
  3. Add the sifted cocoa powder, baking powder, and sea salt directly into the wet ingredients. Use a silicone spatula to gently fold the dry ingredients in until no streaks of brown dust remain.
  4. Gently fold in most of the 0.33 cup dark chocolate chips, reserving a tablespoon for the top.
  5. Pour the batter into the prepared baking pan and smooth the top with your spatula.
  6. Sprinkle the remaining chocolate chips over the surface until evenly distributed.
  7. Bake for 22 minutes until the edges are firm and the center no longer jiggles like liquid.
  8. Remove from the oven and let them cool completely in the pan. This is the hardest part, but the structure sets as it cools.
