Ingredients:
- 1 cup plain Greek yogurt (full-fat or 2%)
- 1 large egg
- 1 tsp pure vanilla extract
- 0.5 cup maple syrup or honey
- 0.5 cup unsweetened cocoa powder, sifted
- 0.5 tsp baking powder
- 0.25 tsp sea salt
- 0.33 cup dark chocolate chips
Instructions:
- Preheat your oven to 350°F (175°C). Line an 8x8-inch square baking pan with parchment paper, leaving an overhang on two sides for easy removal.
- In a large mixing bowl, whisk together the Greek yogurt, egg, vanilla extract, and liquid sweetener (maple syrup or honey) until the mixture is completely smooth and pale yellow.
- Add the sifted cocoa powder, baking powder, and sea salt directly into the wet ingredients. Use a silicone spatula to gently fold the dry ingredients in until no streaks of brown dust remain.
- Gently fold in most of the 0.33 cup dark chocolate chips, reserving a tablespoon for the top.
- Pour the batter into the prepared baking pan and smooth the top with your spatula.
- Sprinkle the remaining chocolate chips over the surface until evenly distributed.
- Bake for 22 minutes until the edges are firm and the center no longer jiggles like liquid.
- Remove from the oven and let them cool completely in the pan. This is the hardest part, but the structure sets as it cools.
