Ingredients:
- 1 ½ cups (192g) Hotcake Mix
- 1 cup (240ml) Milk
- 1 Large Egg
- 2 tablespoons (30ml) Melted Unsalted Butter, plus more for greasing the pan
- 1 teaspoon Vanilla Extract (optional)
Instructions:
- In a large bowl, whisk together the hotcake mix, milk, egg, melted butter, and vanilla extract (if using) until just combined. Be careful not to overmix; a few lumps are fine.
- Heat a lightly greased non-stick skillet or griddle over medium heat. Test the temperature by flicking a few drops of water onto the surface; they should sizzle gently and evaporate quickly.
- Pour ¼ cup of batter onto the hot griddle for each hotcake.
- Cook for 2-3 minutes per side, or until golden brown and cooked through. Flip when bubbles start to form on the surface and the edges look set.
- Serve the hotcakes immediately with your favorite toppings.
