Ingredients:

  • 1 ½ cups (192g) Hotcake Mix
  • 1 cup (240ml) Milk
  • 1 Large Egg
  • 2 tablespoons (30ml) Melted Unsalted Butter, plus more for greasing the pan
  • 1 teaspoon Vanilla Extract (optional)

Instructions:

  1. In a large bowl, whisk together the hotcake mix, milk, egg, melted butter, and vanilla extract (if using) until just combined. Be careful not to overmix; a few lumps are fine.
  2. Heat a lightly greased non-stick skillet or griddle over medium heat. Test the temperature by flicking a few drops of water onto the surface; they should sizzle gently and evaporate quickly.
  3. Pour ¼ cup of batter onto the hot griddle for each hotcake.
  4. Cook for 2-3 minutes per side, or until golden brown and cooked through. Flip when bubbles start to form on the surface and the edges look set.
  5. Serve the hotcakes immediately with your favorite toppings.
