Ingredients:
- 1 cup all-purpose flour (120g)
- 2 tablespoons granulated sugar (25g)
- 1 tablespoon baking powder (12g)
- ½ teaspoon baking soda (2g)
- ¼ teaspoon salt (1g)
- 1 cup buttermilk (240ml)
- 1 large egg, beaten
- 2 tablespoons unsalted butter, melted (30g)
- 1 teaspoon vanilla extract (optional)
- Additional butter or oil for greasing the skillet
Instructions:
- In a large bowl, sift together flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk together buttermilk, beaten egg, melted butter, and vanilla extract if using.
- Pour the wet ingredients into the dry ingredients. Stir gently with a spoon or spatula until just combined (the batter should be lumpy).
- Preheat griddle or skillet over medium heat. Lightly grease with butter or oil.
- Pour about ¼ cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and edges look set (about 2-3 minutes).
- Flip the pancakes and cook for an additional 1-2 minutes until golden brown. Repeat with remaining batter, greasing the skillet as necessary.
- Serve pancakes warm with maple syrup and your favorite toppings.
