Ingredients:

  • 1 cup all-purpose flour (120g)
  • 2 tablespoons granulated sugar (25g)
  • 1 tablespoon baking powder (12g)
  • ½ teaspoon baking soda (2g)
  • ¼ teaspoon salt (1g)
  • 1 cup buttermilk (240ml)
  • 1 large egg, beaten
  • 2 tablespoons unsalted butter, melted (30g)
  • 1 teaspoon vanilla extract (optional)
  • Additional butter or oil for greasing the skillet

Instructions:

  1. In a large bowl, sift together flour, sugar, baking powder, baking soda, and salt.
  2. In a separate bowl, whisk together buttermilk, beaten egg, melted butter, and vanilla extract if using.
  3. Pour the wet ingredients into the dry ingredients. Stir gently with a spoon or spatula until just combined (the batter should be lumpy).
  4. Preheat griddle or skillet over medium heat. Lightly grease with butter or oil.
  5. Pour about ¼ cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and edges look set (about 2-3 minutes).
  6. Flip the pancakes and cook for an additional 1-2 minutes until golden brown. Repeat with remaining batter, greasing the skillet as necessary.
  7. Serve pancakes warm with maple syrup and your favorite toppings.
