Ingredients:
- 2 cups (300g) fresh strawberries, hulled and quartered
- 1 cup (150g) fresh blueberries
- 2 cups (300g) fresh pineapple, diced into ½ inch cubes
- 2 cups (300g) seedless green grapes, halved
- 2 cups (300g) ripe mango, diced
- 3 (approx. 150g) kiwis, peeled and sliced into half-moons
- 3 tbsp (60ml) honey
- 2 tbsp (30ml) fresh lime juice
- 1 tbsp (4g) fresh mint leaves, chiffonade
- ¼ tsp (1.5g) lime zest
Instructions:
- Prepare all fruits by chopping them into uniform, bite-sized pieces (approximately ½ inch). Place the strawberries, blueberries, pineapple, grapes, mango, and kiwi into a large glass mixing bowl.
- In a separate small bowl, whisk together the honey, lime juice, lime zest, and sliced mint until the honey is fully incorporated and the glaze is smooth.
- Drizzle the glaze over the fruit and use a large spatula to gently fold the mixture from the bottom up until every piece of fruit is evenly coated, taking care not to bruise the softer fruits.
