Ingredients:

  • 4 large russet potatoes, peeled and cut into fries
  • 1 tablespoon cornstarch
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 4 cups vegetable oil for frying
  • 1 cup shredded cheese
  • ½ cup cooked boba pearls
  • ¼ cup sweet chili sauce
  • ¼ cup ranch dressing
  • 2 green onions, chopped

Instructions:

  1. Soak the cut fries in cold water for 30 minutes to remove excess starch. Drain and pat dry with a kitchen towel.
  2. In a large mixing bowl, toss the fries with cornstarch, salt, and black pepper until evenly coated.
  3. Fill a fryer or deep pot with oil and heat to 350°F (175°C). Use a thermometer for accuracy.
  4. Fry the coated fries in batches, ensuring they are not overcrowded. Cook until golden brown and crispy, about 5-7 minutes per batch.
  5. Remove the fries and drain on a baking sheet lined with parchment paper.
  6. Immediately sprinkle hot fries with shredded cheese, followed by boba pearls, sweet chili sauce, and ranch dressing. Garnish with chopped green onions.
  7. Serve immediately while hot and enjoy!
