Ingredients:
- 4 large russet potatoes, peeled and cut into fries
- 1 tablespoon cornstarch
- 1 teaspoon salt
- ½ teaspoon black pepper
- 4 cups vegetable oil for frying
- 1 cup shredded cheese
- ½ cup cooked boba pearls
- ¼ cup sweet chili sauce

- 2 green onions, chopped
Instructions:
- Soak the cut fries in cold water for 30 minutes to remove excess starch. Drain and pat dry with a kitchen towel.
- In a large mixing bowl, toss the fries with cornstarch, salt, and black pepper until evenly coated.
- Fill a fryer or deep pot with oil and heat to 350°F (175°C). Use a thermometer for accuracy.
- Fry the coated fries in batches, ensuring they are not overcrowded. Cook until golden brown and crispy, about 5-7 minutes per batch.
- Remove the fries and drain on a baking sheet lined with parchment paper.
- Immediately sprinkle hot fries with shredded cheese, followed by boba pearls, sweet chili sauce, and ranch dressing. Garnish with chopped green onions.
