Ingredients:

  • 1 lb (450g) chicken wings
  • 1/4 cup (60ml) olive oil
  • 2 tablespoons lemon juice
  • Zest of 1 lemon
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon crushed red pepper flakes
  • Salt and pepper to taste
  • 1 cup (120g) all-purpose flour
  • 1/2 cup (50g) cornstarch
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • Oil for frying

Instructions:

  1. In a large bowl, combine olive oil, lemon juice, lemon zest, garlic powder, onion powder, oregano, basil, red pepper flakes, salt, and pepper.
  2. Add chicken wings and toss until well coated. Cover and marinate in the refrigerator for at least 30 minutes.
  3. In a shallow dish, whisk together flour, cornstarch, salt, and garlic powder.
  4. In a frying pan or deep fryer, heat oil to 350°F (175°C) for frying.
  5. Remove wings from marinade
  6. Carefully place coated wings in the hot oil, without overcrowding. Fry for 7-10 minutes until golden brown.
  7. Remove wings from oil and place on paper towels to drain excess oil. Serve hot with your favorite dipping sauces.
