Ingredients:
- 4 (6 oz) fillets of white fish (cod, tilapia, or haddock)
- 1 cup all-purpose flour
- 1 cup buttermilk or whole milk
- 1 large egg
- 1 tablespoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon cayenne pepper (adjust to taste)
- 1 teaspoon dried oregano
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon dried thyme
- Vegetable oil (for frying)
Instructions:
- In a bowl, combine paprika, garlic powder, onion powder, cayenne pepper, oregano, salt, black pepper, and thyme.
- Rub the spice mix evenly over both sides of the fish fillets.
- In a bowl, whisk together buttermilk and egg. Place the flour in a separate shallow bowl.
- Dip each fillet into the buttermilk mixture, then coat with flour. Shake off excess flour.
- Place coated fillets on a plate and refrigerate for 30 minutes to help the coating adhere.
- In a frying pan, heat about 1 inch of oil over medium-high heat until shimmering.
- Carefully add fillets to the hot oil in batches, avoiding overcrowding. Fry until golden brown, about 3-4 minutes per side.
- Remove fish with tongs and place on paper towels to drain excess oil. Serve hot.
