Ingredients:

  • 4 (6 oz) fillets of white fish (cod, tilapia, or haddock)
  • 1 cup all-purpose flour
  • 1 cup buttermilk or whole milk
  • 1 large egg
  • 1 tablespoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cayenne pepper (adjust to taste)
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried thyme
  • Vegetable oil (for frying)

Instructions:

  1. In a bowl, combine paprika, garlic powder, onion powder, cayenne pepper, oregano, salt, black pepper, and thyme.
  2. Rub the spice mix evenly over both sides of the fish fillets.
  3. In a bowl, whisk together buttermilk and egg. Place the flour in a separate shallow bowl.
  4. Dip each fillet into the buttermilk mixture, then coat with flour. Shake off excess flour.
  5. Place coated fillets on a plate and refrigerate for 30 minutes to help the coating adhere.
  6. In a frying pan, heat about 1 inch of oil over medium-high heat until shimmering.
  7. Carefully add fillets to the hot oil in batches, avoiding overcrowding. Fry until golden brown, about 3-4 minutes per side.
  8. Remove fish with tongs and place on paper towels to drain excess oil. Serve hot.
