Instructions:
- Gather and measure all ingredients.
- In a mixing bowl, combine dry ingredients: flour, sugar, baking powder, and salt. Whisk together.
- In another bowl, whisk together wet ingredients: milk, egg, melted butter, and vanilla extract (if using).
- Pour the wet mixture into the dry ingredients and stir until just combined. (Do not overmix; a few lumps are okay.)
- Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or cooking spray.
- Use a ladle to pour batter onto the skillet, forming pancakes (about ¼ cup each).
- Cook until bubbles form on the surface (about 2-3 minutes), then flip and cook for an additional 2 minutes until golden brown.
- Repeat with remaining batter, adjusting heat as necessary to avoid burning.
