Ingredients:

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup all-purpose flour
  • 1 large egg
  • 1 cup breadcrumbs (preferably Panko)
  • 1/2 cup grated Parmesan cheese
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon smoked paprika (optional)
  • 1/2 cup unsalted butter
  • 3 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions:

  1. Cut chicken into bite-sized pieces. Pat dry with paper towels.
  2. In one bowl, place the flour. In a second bowl, beat the egg. In a third bowl, combine breadcrumbs, grated Parmesan, garlic powder, onion powder, salt, pepper, and paprika.
  3. Dredge each chicken piece in flour, shaking off excess. Dip in beaten egg, allowing excess to drip off. Coat in breadcrumb mixture, pressing gently to adhere.
  4. For Baking: Preheat oven to 400°F (200°C). Place coated chicken on a greased baking sheet and bake for 15-20 minutes until golden brown. For Frying: In a skillet, heat oil over medium-high heat. Fry chicken bites in batches until golden brown and cooked through, about 5-7 minutes, turning occasionally.
  5. In a saucepan, melt butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Stir in grated Parmesan until well combined and remove from heat.
  6. Toss the cooked chicken bites in the garlic Parmesan sauce. Garnish with fresh parsley and serve immediately.
