Ingredients:
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 cup all-purpose flour
- 1 large egg
- 1 cup breadcrumbs (preferably Panko)
- 1/2 cup grated Parmesan cheese
- 2 teaspoons garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon smoked paprika (optional)
- 1/2 cup unsalted butter
- 3 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions:
- Cut chicken into bite-sized pieces. Pat dry with paper towels.
- In one bowl, place the flour. In a second bowl, beat the egg. In a third bowl, combine breadcrumbs, grated Parmesan, garlic powder, onion powder, salt, pepper, and paprika.
- Dredge each chicken piece in flour, shaking off excess. Dip in beaten egg, allowing excess to drip off. Coat in breadcrumb mixture, pressing gently to adhere.
- For Baking: Preheat oven to 400°F (200°C). Place coated chicken on a greased baking sheet and bake for 15-20 minutes until golden brown. For Frying: In a skillet, heat oil over medium-high heat. Fry chicken bites in batches until golden brown and cooked through, about 5-7 minutes, turning occasionally.
- In a saucepan, melt butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Stir in grated Parmesan until well combined and remove from heat.
- Toss the cooked chicken bites in the garlic Parmesan sauce. Garnish with fresh parsley and serve immediately.
