Ingredients:

  • 1 lb (450g) fresh green beans, trimmed
  • 2 tablespoons (30ml) olive oil
  • 3 garlic cloves, minced
  • Zest of 1 lemon
  • Salt, to taste
  • Black pepper, to taste
  • Lemon wedges for garnish (optional)
  • Toasted slivered almonds for garnish (optional)

Instructions:

  1. Blanch the green beans by bringing a large pot of salted water to a boil. Add the trimmed green beans and cook for 2-3 minutes until bright green. Transfer immediately to an ice water bath to stop the cooking process.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute, until fragrant (do not brown).
  3. Drain the green beans and add them to the skillet. Toss to coat evenly in the garlic oil and sauté for another 3-4 minutes. Add lemon zest, salt, and pepper to taste, tossing to combine.
  4. Transfer to a serving dish and garnish with lemon wedges and slivered almonds, if using. Enjoy warm!
