Ingredients:
- 2 cups (280g) gluten-free all-purpose flour blend (with xanthan gum)
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) baking powder
- 1 tbsp (8g) ground cinnamon
- 1 tsp (2g) ground ginger
- 1/4 tsp (1g) ground cloves
- 1/2 tsp (3g) salt
- 1 cup (240g) pumpkin puree
- 3/4 cup (150g) brown sugar, packed
- 1/2 cup (120ml) melted coconut oil
- 2 large (100g) eggs
- 1 tsp (5ml) vanilla extract
- 1 cup (120g) powdered sugar
- 2 tbsp (30ml) pure maple syrup
- 1 tbsp (15ml) milk
- 1/4 tsp (1g) sea salt
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line it with parchment paper.
- In a medium bowl, whisk together the gluten-free flour, baking soda, baking powder, cinnamon, ginger, cloves, and salt until no lumps remain.
- In a large bowl, beat the pumpkin puree and brown sugar until smooth.
- Whisk in the melted coconut oil, eggs, and vanilla extract until the mixture is fully emulsified.
- Fold the dry ingredients into the wet batter using a spatula, stirring just until combined.
- Pour the batter into the prepared pan and bake for 50–55 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack.
- Whisk together powdered sugar, maple syrup, milk, and sea salt to create the glaze, then drizzle over the cooled loaf.
