Ingredients:
- 2 cups (190g) superfine almond flour
- 3 tbsp (42g) melted unsalted butter
- 2 tbsp (30ml) maple syrup
- 1/4 tsp (1.5g) fine sea salt
- 15 oz (425g) pure pumpkin puree
- 3 large (150g) eggs
- 3/4 cup (180ml) evaporated milk
- 1/2 cup (100g) packed light brown sugar
- 1 tbsp (8g) pumpkin pie spice
- 1/2 tsp (3g) vanilla extract
- 1/4 tsp (1.5g) salt
Instructions:
- Mix almond flour, melted butter, maple syrup, and salt in a bowl until a dough forms.
- Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish.
- Preheat oven to 350°F (175°C) and bake the crust for 8–10 minutes until lightly golden.
- Allow the crust to cool for 5 minutes.
- In a large bowl, whisk the pumpkin puree, brown sugar, pumpkin pie spice, salt, and vanilla until smooth.
- Gently whisk in the eggs one at a time, followed by the evaporated milk, stopping as soon as combined to avoid creating foam.
- Pour the custard into the par-baked crust and bake until set.
- Chill the pie for a minimum of 4 hours before serving to ensure stability.
