Ingredients:
- 2 medium apples (Granny Smith, Honeycrisp, or a mix), peeled, cored, and diced
- 1 tablespoon granulated sugar
- 1 teaspoon ground cinnamon
- ⅛ teaspoon ground nutmeg
- 1 tablespoon lemon juice
- 1 cup all-purpose flour
- 2 tablespoons granulated sugar
- 2 teaspoons baking powder
- ¼ teaspoon salt
- 1 large egg
- ½ cup milk
- 1 tablespoon melted unsalted butter, cooled
- 1 teaspoon vanilla extract
- 4 cups vegetable oil or canola oil
- 1 cup powdered sugar
- 2-3 tablespoons milk or water
- ½ teaspoon vanilla extract
Instructions:
- In a large bowl, combine the diced apples, sugar, cinnamon, nutmeg, and lemon juice. Toss gently to coat and set aside.
- In a separate bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together the egg, milk, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and gently whisk until just combined. Do not overmix; a few lumps are okay.
- Gently fold the spiced apple mixture into the batter until evenly distributed.
- In a deep frying pan or pot, heat the oil over medium-high heat to 350°F (175°C). Use a thermometer to monitor the temperature.
- Drop spoonfuls (about 2 tablespoons each) of the apple batter into the hot oil, being careful not to overcrowd the pan. Fry for 2-3 minutes per side, or until golden brown and cooked through.
- Remove the fritters from the oil with a slotted spoon or spider and place them on a wire rack lined with paper towels to drain excess oil.
- While the fritters are cooling, whisk together the powdered sugar, milk/water, and vanilla extract in a small bowl until smooth. Add more liquid if needed to reach your desired consistency.
- Drizzle the glaze over the warm fritters. Alternatively, you can dust them with powdered sugar.
- Serve immediately and enjoy!
