Ingredients:
- 2 cups (300g) fresh or frozen goumi berries
- 1/2 cup (100g) granulated sugar
- 1/4 cup (60ml) water
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract (optional)
Instructions:
- Wash fresh goumi berries and measure out the sugar, water, lemon juice, and vanilla extract.
- In a medium saucepan, combine goumi berries, sugar, and water.
- Bring the mixture to a boil over medium heat, then reduce to a simmer. Stir occasionally and cook for 15-20 minutes until the berries soften and the mixture thickens.
- Stir in lemon juice and vanilla extract; simmer for an additional 2 minutes.
- For a smoother texture, blend the mixture briefly using an immersion blender or transfer to a countertop blender.
- Remove the compote from heat and let cool before transferring to a jar. Store in the refrigerator for up to 2 weeks.
