Ingredients:

  • 1 ½ pounds boneless, skinless chicken thighs, cut into 1-inch cubes
  • ¼ cup extra-virgin olive oil
  • 3 tablespoons fresh lemon juice
  • 4 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup Greek yogurt
  • ½ cucumber, grated and drained
  • 2 cloves garlic, minced
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon fresh lemon juice
  • Salt and pepper to taste

Instructions:

  1. In a bowl, combine olive oil, lemon juice, minced garlic, oregano, salt, and pepper to prepare the marinade.
  2. Add chicken to the marinade, mixing well to coat. Cover and refrigerate for at least 30 minutes.
  3. In a separate bowl, combine Greek yogurt, grated cucumber, minced garlic, dill, lemon juice, salt, and pepper to make tzatziki sauce.
  4. Thread marinated chicken onto skewers.
  5. Heat the grill to medium-high heat.
  6. Cook the skewers for about 10 minutes, turning halfway through, until golden and the internal temperature reaches 165°F.
  7. Serve hot with tzatziki sauce and warm pita.
