Ingredients:
- 1 ½ pounds boneless, skinless chicken thighs, cut into 1-inch cubes
- ¼ cup extra-virgin olive oil
- 3 tablespoons fresh lemon juice
- 4 cloves garlic, minced
- 1 tablespoon dried oregano
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup Greek yogurt
- ½ cucumber, grated and drained
- 2 cloves garlic, minced
- 1 tablespoon fresh dill, chopped
- 1 tablespoon fresh lemon juice
- Salt and pepper to taste
Instructions:
- In a bowl, combine olive oil, lemon juice, minced garlic, oregano, salt, and pepper to prepare the marinade.
- Add chicken to the marinade, mixing well to coat. Cover and refrigerate for at least 30 minutes.
- In a separate bowl, combine Greek yogurt, grated cucumber, minced garlic, dill, lemon juice, salt, and pepper to make tzatziki sauce.
- Thread marinated chicken onto skewers.
- Heat the grill to medium-high heat.
- Cook the skewers for about 10 minutes, turning halfway through, until golden and the internal temperature reaches 165°F.
- Serve hot with tzatziki sauce and warm pita.
