Ingredients:
- 1 cup sushi rice (240 g)
- 1 ¼ cups water (300 ml)
- 2 tablespoons rice vinegar (30 ml)
- 1 tablespoon sugar (12 g)
- ½ teaspoon salt (2.5 g)
- 1 can (12 oz / 340 g) Spam, sliced into ¼-inch thick pieces
- 2 tablespoons soy sauce (30 ml)
- 1 tablespoon olive oil (15 ml)
- 1 small cucumber, julienned
- 1 medium carrot, julienned
- ½ avocado, sliced
- 1 sheet of nori (seaweed), cut into strips
- Sesame seeds (optional)
- Wasabi and soy sauce for serving (optional)
Instructions:
- Rinse and cook the sushi rice in a medium saucepan with water. Bring water to a boil, reduce to low, cover, and simmer for 18-20 minutes.
- In a small bowl, mix rice vinegar, sugar, and salt; heat until sugar dissolves.
- Once rice is cooked, fluff with a paddle and mix in the vinegar mixture. Allow to cool.
- Preheat the grill pan over medium heat.
- Prepare the Spam: Brush with soy sauce and olive oil.
- Grill the Spam slices until caramelized and heated through (about 3-4 minutes per side).
- Assemble the sushi: Place a small amount of sushi rice on a piece of nori. Layer with grilled Spam, cucumber, carrot, and avocado. Roll tightly and slice into bite-sized pieces.
- Serve with sesame seeds, wasabi, and soy sauce if desired.
