Ingredients:

  • 1 cup sushi rice (240 g)
  • 1 ¼ cups water (300 ml)
  • 2 tablespoons rice vinegar (30 ml)
  • 1 tablespoon sugar (12 g)
  • ½ teaspoon salt (2.5 g)
  • 1 can (12 oz / 340 g) Spam, sliced into ¼-inch thick pieces
  • 2 tablespoons soy sauce (30 ml)
  • 1 tablespoon olive oil (15 ml)
  • 1 small cucumber, julienned
  • 1 medium carrot, julienned
  • ½ avocado, sliced
  • 1 sheet of nori (seaweed), cut into strips
  • Sesame seeds (optional)
  • Wasabi and soy sauce for serving (optional)

Instructions:

  1. Rinse and cook the sushi rice in a medium saucepan with water. Bring water to a boil, reduce to low, cover, and simmer for 18-20 minutes.
  2. In a small bowl, mix rice vinegar, sugar, and salt; heat until sugar dissolves.
  3. Once rice is cooked, fluff with a paddle and mix in the vinegar mixture. Allow to cool.
  4. Preheat the grill pan over medium heat.
  5. Prepare the Spam: Brush with soy sauce and olive oil.
  6. Grill the Spam slices until caramelized and heated through (about 3-4 minutes per side).
  7. Assemble the sushi: Place a small amount of sushi rice on a piece of nori. Layer with grilled Spam, cucumber, carrot, and avocado. Roll tightly and slice into bite-sized pieces.
  8. Serve with sesame seeds, wasabi, and soy sauce if desired.
