Ingredients:
- 2 cups (250g) all-purpose flour
- 1 cup (200g) granulated sugar
- 1 tbsp (8g) baking powder
- ½ tsp (3g) baking soda
- 1 tbsp (8g) ground cinnamon
- 1 tsp (2g) ground ginger
- ¼ tsp (1g) ground cloves
- ½ tsp (3g) salt
- ½ cup (115g) unsalted butter, melted and cooled
- 2 large eggs, room temperature
- ½ cup (120ml) pumpkin puree
- ½ cup (60g) finely grated carrots
- ¼ cup (60ml) milk
- 1 tsp (5ml) vanilla extract
- ½ cup (60g) chopped walnuts
- ½ cup (70g) dried cranberries
Instructions:
- Preheat your oven to 350°F (175°C). Grease your 9x5 loaf pan with butter or line it with parchment paper for an easy release.
- In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, ginger, cloves, and salt until no streaks of white flour remain.
- In a large bowl, whisk the melted butter and eggs together until smooth. Stir in the pumpkin puree, grated carrots, milk, and vanilla extract. Whisk until the mixture is a uniform, sunset-orange color and the butter is fully incorporated.
- Pour the dry ingredients into the wet mixture. Using a rubber spatula, gently fold the flour in using a 'cut and turn' motion. Stop the moment you see no more dry flour streaks.
- Gently fold in the chopped nuts and dried fruit.
- Pour the batter into the prepared pan, smoothing the top with your spatula. Bake for 55-65 minutes. The bread is done when a toothpick inserted into the center comes out clean.
