Ingredients:

  • 2 cups (250g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1 tbsp (8g) baking powder
  • ½ tsp (3g) baking soda
  • 1 tbsp (8g) ground cinnamon
  • 1 tsp (2g) ground ginger
  • ¼ tsp (1g) ground cloves
  • ½ tsp (3g) salt
  • ½ cup (115g) unsalted butter, melted and cooled
  • 2 large eggs, room temperature
  • ½ cup (120ml) pumpkin puree
  • ½ cup (60g) finely grated carrots
  • ¼ cup (60ml) milk
  • 1 tsp (5ml) vanilla extract
  • ½ cup (60g) chopped walnuts
  • ½ cup (70g) dried cranberries

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease your 9x5 loaf pan with butter or line it with parchment paper for an easy release.
  2. In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, ginger, cloves, and salt until no streaks of white flour remain.
  3. In a large bowl, whisk the melted butter and eggs together until smooth. Stir in the pumpkin puree, grated carrots, milk, and vanilla extract. Whisk until the mixture is a uniform, sunset-orange color and the butter is fully incorporated.
  4. Pour the dry ingredients into the wet mixture. Using a rubber spatula, gently fold the flour in using a 'cut and turn' motion. Stop the moment you see no more dry flour streaks.
  5. Gently fold in the chopped nuts and dried fruit.
  6. Pour the batter into the prepared pan, smoothing the top with your spatula. Bake for 55-65 minutes. The bread is done when a toothpick inserted into the center comes out clean.
