Ingredients:

  • 1 lb mixed vegetables (sweet potato, carrots, zucchini, or beets)
  • 2 tbsp extra virgin olive oil
  • 1 tsp fine sea salt
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp black pepper

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Using a mandoline or a sharp knife, slice the mixed vegetables into uniform, paper-thin rounds (approximately 1/16th of an inch).
  3. In a large mixing bowl, toss the vegetable slices with olive oil, sea salt, garlic powder, smoked paprika, and black pepper until evenly coated.
  4. Line a rimmed baking sheet with parchment paper and arrange the slices in a single layer, ensuring they do not touch or overlap.
  5. Bake for 15–20 minutes, monitoring closely during the final 5 minutes, until edges are golden and centers are firm.
  6. Remove from oven and allow to cool on the pan for 5 minutes to finish crisping.
