Ingredients:
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 1 cup vegetable oil
- 4 large eggs
- 3 cups shredded carrots
- 1/2 cup chopped walnuts
- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- A pinch of salt
Instructions:
- Preheat the oven to 350°F (175°C).
- Grease and line a 9x13 inch baking pan with parchment paper.
- In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In a large bowl, combine granulated sugar, brown sugar, and vegetable oil; mix until smooth.
- Add the eggs one at a time, mixing well after each addition.
- Gradually add the dry ingredients to the wet mixture and combine until just blended.
- Fold in shredded carrots and walnuts.
- Pour batter into the prepared baking pan and spread evenly.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- While baking, prepare the cream cheese frosting by beating together cream cheese and butter until smooth.
- Gradually add powdered sugar, followed by vanilla extract and salt; mix until fluffy.
- Allow bars to cool completely before frosting them with cream cheese frosting.
- Cut into squares and serve.
