Ingredients:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 3 cups shredded carrots
  • 1/2 cup chopped walnuts
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Grease and line a 9x13 inch baking pan with parchment paper.
  3. In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. In a large bowl, combine granulated sugar, brown sugar, and vegetable oil; mix until smooth.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Gradually add the dry ingredients to the wet mixture and combine until just blended.
  7. Fold in shredded carrots and walnuts.
  8. Pour batter into the prepared baking pan and spread evenly.
  9. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  10. While baking, prepare the cream cheese frosting by beating together cream cheese and butter until smooth.
  11. Gradually add powdered sugar, followed by vanilla extract and salt; mix until fluffy.
  12. Allow bars to cool completely before frosting them with cream cheese frosting.
  13. Cut into squares and serve.
