Ingredients:
- 1 cup all-purpose flour
- 1 cup whole milk, room temperature
- 3 large eggs, room temperature
- 2 tbsp unsalted butter, melted and cooled
- 1/2 tsp fine sea salt
- 2 tbsp unsalted butter, softened
Instructions:
- Preheat the oven to 450°F (230°C), placing the popover pan inside the oven while it preheats.
- Carefully remove the scorching hot pan from the oven and grease each cup generously with 2 tbsp softened butter.
- Combine 1 cup all-purpose flour, 1 cup room-temperature milk, 3 room-temperature eggs, 2 tbsp melted butter, and 1/2 tsp fine sea salt in a blender; pulse for 20–30 seconds until the mixture is completely smooth and slightly frothy.
- Divide the batter evenly between the hot, greased cups, filling them about halfway.
- Quickly return the pan to the oven and bake for 20 minutes at 450°F (230°C).
- Reduce the oven temperature to 350°F (180°C) and bake for another 10–15 minutes; do not open the oven door during this process.
- Remove the popovers from the oven when they are deeply golden and feel firm to the touch.
