Ingredients:

  • 2 ½ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • ¾ cup unsalted butter, softened
  • ¾ cup packed brown sugar
  • ½ cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup white chocolate chips
  • 1 cup macadamia nuts, chopped

Instructions:

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy. Beat in the egg and vanilla extract.
  4. Gradually add the flour mixture to the wet ingredients, mixing just until combined.
  5. Gently fold in white chocolate chips and chopped macadamia nuts.
  6. Cover and refrigerate the dough for 30 minutes.
  7. Use a cookie scoop to portion out the dough onto prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 12-14 minutes or until the edges are golden.
  9. Remove from the oven and let cool on baking sheets for 5 minutes before transferring to wire racks.
