Ingredients:
- 1 cup (230g) Full-fat Mayonnaise
- 2 tbsp (30g) Sweet Pickle Relish, finely minced
- 1.5 tbsp (22g) Yellow Mustard
- 1 tsp (5ml) White Vinegar
- 1/2 tsp (2.5g) Smoked Paprika
- 1/2 tsp (2.5g) Onion Powder
- 1/2 tsp (2.5g) Garlic Powder
- 1/4 tsp (1.25g) White Pepper
Instructions:
- Prepare the relish. Mince the 2 tbsp (30g) sweet pickle relish on a cutting board until the pieces are very fine.
- Combine the base. Place 1 cup (230g) full fat mayonnaise into your glass bowl.
- Add the aromatics. Sprinkle the 1/2 tsp (2.5g) onion powder, 1/2 tsp (2.5g) garlic powder, and 1/4 tsp (1.25g) white pepper over the mayo.
- Introduce the color. Add the 1/2 tsp (2.5g) smoked paprika.
- Whisk in the tang. Pour in the 1.5 tbsp (22g) yellow mustard and 1 tsp (5ml) white vinegar.
- Incorporate the sweetness. Fold in the finely minced relish and any juices from the cutting board.
- Emulsify the mixture. Stir briskly with a whisk for 2 minutes until the sauce is a uniform, pale orange color.
- Seal the bowl. Cover the bowl tightly with plastic wrap or transfer to an airtight mason jar.
- Initiate the chill. Place in the refrigerator for at least 1 hours.
- Final stir. Before serving, give it one last gentle stir to redistribute any moisture that may have settled.
