Ingredients:
- 3/4 cup extra virgin olive oil
- 1/4 cup red wine vinegar
- 1 tbsp fresh lemon juice
- 1 tbsp Dijon mustard
- 2 cloves garlic, minced fine
- 1/2 tsp sea salt
- 1/4 tsp black pepper
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/4 tsp red pepper flakes
Instructions:
- Combine the red wine vinegar, lemon juice, Dijon mustard, minced garlic, salt, pepper, and all dried herbs in a jar or mixing bowl. Whisk or shake vigorously for 30 seconds until it forms a thick, opaque paste.
- Slowly pour in the extra virgin olive oil. If using a bowl, whisk constantly in a rapid circular motion. If using a jar, screw the lid on tight and shake violently for 1 minute until a creamy, unified gold-colored emulsion forms.
- Perform a final taste test by dipping a piece of cooked pasta or vegetable into the dressing; adjust salt for depth or add more lemon juice for additional zing if desired.
