Ingredients:

  • 1 cup (240 ml) water
  • 3/4 cup (150 g) granulated sugar
  • 1/4 cup (60 ml) rice vinegar
  • 1 tablespoon (15 g) red chili flakes
  • 2 garlic cloves, minced
  • 1 tablespoon (7.5 g) cornstarch
  • 2 tablespoons (30 ml) water (for slurry)
  • 1 tablespoon (15 ml) soy sauce
  • Pinch of salt

Instructions:

  1. Combine water, granulated sugar, and rice vinegar in a medium saucepan.
  2. Heat over medium flame until sugar dissolves.
  3. Add minced garlic and red chili flakes.
  4. Bring to a gentle simmer for 5 minutes.
  5. Mix cornstarch with 2 tablespoons of water to create a slurry.
  6. Whisk the slurry into the simmering mixture.
  7. Stir continuously until sauce thickens (about 2-3 minutes).
  8. Remove from heat and stir in soy sauce and salt.
  9. Let cool slightly before transferring to a container.
  10. Store in the refrigerator until ready to use.
