Ingredients:
- 1 cup (240 ml) water
- 3/4 cup (150 g) granulated sugar
- 1/4 cup (60 ml) rice vinegar
- 1 tablespoon (15 g) red chili flakes
- 2 garlic cloves, minced
- 1 tablespoon (7.5 g) cornstarch
- 2 tablespoons (30 ml) water (for slurry)
- 1 tablespoon (15 ml) soy sauce
- Pinch of salt
Instructions:
- Combine water, granulated sugar, and rice vinegar in a medium saucepan.
- Heat over medium flame until sugar dissolves.
- Add minced garlic and red chili flakes.
- Bring to a gentle simmer for 5 minutes.
- Mix cornstarch with 2 tablespoons of water to create a slurry.
- Whisk the slurry into the simmering mixture.
- Stir continuously until sauce thickens (about 2-3 minutes).
- Remove from heat and stir in soy sauce and salt.
- Let cool slightly before transferring to a container.
- Store in the refrigerator until ready to use.
